Traditionally in Italy, pasta is not only a staple dish but also a favorite ingredient in soups, especially when paired with beans. The base of our original Yelli soup is made with red lentils and orzo, a gentle, small pasta. Vegetables, fragrant Mediterranean greens are added to create a homemade Italian soup. Serve with a light sprinkle of grated Parmesan cheese.

About the dish

When Marco Polo brought pasta back from his travels in China, it quickly captured the hearts and kitchens. Particularly delicious are Italian soups made with unique small sized pasta.  This kind of soup fills you up for a long time due to the complex carbohydrates and fiber.  The foundation of it is red lentils which also are beloved in Italy. These have 3X as much protein as other lentils.  Together with vegetable, tomatoes and onion, we have added authentic Italian spices…oregano, rosemary, thyme.  They add fragrance to the soup and enhance the spiciness of black pepper.

COOKING DIRECTIONS

One, two, three and ready!
What you need: 1 pack of Yelli soup mix,
1 quart of chicken broth (water), 1 teaspoon of sugar, salt to taste.
What you do: bring chicken broth (water) to boil in large pot. Add contents of Yelli soup mix and sugar. Cook covered on low heat for 25 minutes. We have simply left out the salt. Please season to your preference
5 minutes before the end of cooking.
How you serve: add grated Parmesan.
Possible cooking variations: this soup can be cooked with meatballs instead of chicken broth.
