About the dish

Quinoa became popular relatively recently.  Despite the fact that this grain was the mainstay of the Inca diet, it was rediscovered only in the 1960’s.  Quinoa is the most nutritious grain.  What is important about the wonderful nutrients in Quinoa is that they are all easily digestible.  Besides protein and complex carbs, Quinoa maintains strength and energy on the person.  This valuable grain now has armies of fans in Europe as well.  And quinoa has become the perfect addition to the soup with red rice and yellow lentils.  Together these three grains provide an important complement of fiber to your diet.

COOKING DIRECTIONS

One, two, three and ready!
What you need: 1 pack of Yelli soup mix, 1 quart of water, salt to taste.
What you do: bring water to boil in large pot. Add contents of Yelli soup mix. Cook covered on low heat for 35 minutes. We have simply left out the salt. Please season to your preference 5 minutes before the end of cooking.
How you serve: sprinkle the soup with cilantro.
Possible cooking variations: substitute beef broth for water.
